Recipe in Cups
1.5 cups Water
2.5 cups White flour/All Purpose flour
0.5 cups Whole Wheat flour
1.5 Teaspoon Salt
0.5 Teaspoon Dry Yeast
Recipe in Grams
340 g. Water
350 g. White flour/All Purpose flour
70 g. Whole Wheat flour
8 g. Salt
2 g. Dry Yeast
Process
- Mix indgridiants to gether until incorperated and cover bowl with shrink wrap or damp towel
- Wait 4 – 5 hours ( you want to see that the yeast is active and dough is approx 1.5 times the original size
- Fold dough like an envalope and wait 45 min ( we will repeat this 4 times ). cover the dough.

- Fold dough like an envalope and let sit for 10 min and cover
- Place bolw in the refrigerator over night. Approx 8 – 12 hours.
- Next morning take out the dough and let rest in the bowl covered for about an hour/hour and a half
- Shape the dough
- Roll in cornmeal ( this is optional, you can use oats, sesame seeds, poppy seeds or nothign. If you choose nothign make sure to flow the top of the dough well and your proofing basket
- Place shaped dough in the proofing basekt
- Let Proof of Rise for approx 60 min ( give or take 15 min depends on how hot it is where you are ) you want to see the dough increase in size by about 50%
- Pre heat the over to 250 degrees Celsius or 482 Fahrenheit( this should be about as hot as your home oven can go. Dont worry if yours is a bit less, just crank it up to max heat )
- Once dough has proofed turn the dough GENTLY onto parchment paper
- Score the bread
- Load the bread into the pre-heated Dutch Oven
- Cover the Ducth oven and place it in your oven.
- Turn the heat in your oven down to 210 Celsius / 410 Degrees Fahrenheit
- Bake with lid on for 15 min
- After 15 min remove lid
- Reduce heat to 190 Celsius / 375 Fahrenheitand put timer for 20 min
- After 20 min remove bread from dutch oven and place it back in the oven to complete the baking process for another 15-25 min until the crust is a dark brown color
- Place on a cooling rack and let it cool for at least 4 hours
